  • finely grated rind of 1 lemon
  • ½ teaspoon ground cinnamon
  • 1 garlic clove, crushed
  • 3 tablespoons olive oil
  • 250 g (8 oz) large mixed mushrooms, trimmed
  • squeeze of lemon juice
  • salt and pepper
  • chopped parsley, to garnish

Mix together most of the lemon rind (saving some for garnish) with the cinnamon, garlic and oil in a small bowl. Thread the mushrooms on to 12 metal skewers, then brush all over with the flavoured oil and season well.

Heat a griddle pan until smoking hot, then add the mushroom skewers and cook for 2–3 minutes on each side until charred and just tender.

Squeeze over a little lemon juice, then scatter with chopped parsley and the remaining lemon rind and serve.
