Cinnamon Brioche French Toast with Mixed Berries

  • 1 large egg
  • 1 teaspoon ground cinnamon
  • 2 tablespoons caster sugar
  • 125 ml (4 fl oz) milk
  • knob of unsalted butter, for frying
  • 4 thick slices of brioche bread
  • 375 g (12 oz) mixed berries, such as strawberries, raspberries, blueberries, redcurrants and blackcurrants
  • vanilla ice cream, to serve
  • Mix together the egg, cinnamon and sugar in a shallow dish, then whisk in the milk.
  • Heat a large frying pan over a medium heat and add a little butter. Dip 2 slices of the bread in the egg mixture, then place in the hot pan. Cook for 2–3 minutes on each side until golden. Remove from the pan and keep warm. Repeat with the remaining bread, adding a little more butter if necessary.
  • Top with the mixed berries and serve with scoops of vanilla ice cream.
