Chorizo in Red Wine

prep 5 mins cook 8–10 mins
  • 1 tablespoon olive oil
  • 250 g (8 oz) chorizo sausage, thickly sliced
  • 125 ml (4 fl oz) fruity red wine

Heat the oil in a large frying pan, add the chorizo and fry for 1–2 minutes on each side until golden and the natural oil has been released.

Pour in the wine and cook for a further 5 minutes until syrupy, then serve with plenty of bread for mopping up the juices.
