Chocolate Walnut Brownies

  • 225 g (7½ oz) unsalted butter
  • 225 g (7½ oz) plain dark chocolate, chopped
  • 200 g (7 oz) golden caster sugar
  • 3 eggs, beaten
  • 150 g (5 oz) ground almonds
  • 100 g (3½ oz) walnuts, chopped
  • vanilla ice cream, to serve
  • Melt the butter and chocolate together in a small saucepan over a low heat. Stir in the sugar.
  • Beat the eggs into the pan, then stir in the almonds and walnuts.
  • Pour into a 23 cm (9 inch) square cake tin and bake in a preheated oven, 180°C (350°F), Gas Mark 4, for 25 minutes, until the top is set but the middle is still gooey.
  • Serve warm with scoops of vanilla ice cream.
