Chocolate Pots with Hidden Prunes

  • 100 (3 1/2 oz) plain dark chocolate, broken into pieces, plus extra shavings to decorate
  • 400 g (13 oz) can prunes in apple juice, drained
  • 300 g (10 oz) Greek yogurt
  • raspberries, to decorate
  • Place the chocolate in a small microwave-proof bowl and melt in a microwave on medium for 1 minute. Stir and return to the microwave, checking every 20 seconds, until melted and smooth.
  • Remove the stones from the prunes and whizz the flesh in a food processor or with a hand-held blender until smooth. Stir together the prune purée, yogurt and chocolate until evenly mixed.
  • Spoon into cups or glasses and decorate with chocolate shavings and some raspberries.
