Chocolate and Cranberry Crunch Squares

  • 125 g (4 oz) butter
  • 50 g (2 oz) caster sugar
  • 1 tablespoon golden syrup
  • 4 teaspoons cocoa powder
  • 250 g (8 oz) digestive biscuits, crushed
  • 50 g (2 oz) dried cranberries
  • 125 g (4 oz) milk chocolate, broken into pieces
  • 15 g (1/2 oz) butter
  • coloured sweets, such as Smarties, to decorate
  • Line a shallow 18 cm (7 inch) square tin with clingfilm.
  • Melt the butter, sugar, golden syrup and cocoa powder in a saucepan, stirring until smooth. Remove from the heat and stir in the crushed biscuits and cranberries.
  • Spoon the mixture into the prepared tin. Press the mixture down firmly and evenly with the back of a spoon. Place in the freezer for 5 minutes to chill.
  • To make the topping, heat the chocolate and butter in a heatproof bowl over a saucepan of simmering water, making sure the base of the bowl doesn't touch the water, until melted and smooth.
  • Pour the chocolate topping over the biscuit base and spread evenly. Decorate with coloured sweets then return to the freezer for 10 minutes to set. Cut into squares to serve.
