Chocolate Amaretti Puddings

  • 125 g (4 oz) unsalted butter, plus extra, melted, for greasing
  • 1 teaspoon cocoa powder, sifted
  • 125 g (4 oz) dark chocolate, chopped
  • 3 large eggs
  • 125 g (4 oz) caster sugar
  • 35 g (1 1/4 oz) plain flour
  • 50 g (2 oz) amaretti biscuits, crumbled
  • Brush 4 large ramekin dishes with the melted butter and shake in the cocoa powder to coat.
  • Melt the chocolate and butter in a bowl over a saucepan of simmering water.
  • Meanwhile, whisk together the eggs and sugar until light and fluffy.
  • Stir the chocolate, flour and crumbled amaretti biscuits into the egg mixture.
  • Divide between the prepared ramekin dishes and bake in the preheated oven, 190°C (375°F), Gas Mark 5, for 12–15 minutes, until they have risen.
