Chinese Fried Rice with Sausage

  • 100 g (3½ oz) broccoli
  • 100 g (3½ oz) fresh shelled baby peas
  • 2 eggs, well beaten
  • 2 smoked sausages
  • 2 spring onions
  • 1 tablespoon vegetable oil
  • 120 g (3½ oz) cooked long-grain rice
  • 2 teaspoons soy sauce
  • salt and pepper

Wash the broccoli, drain and cut into small florets. Cook for 4 minutes in a saucepan of boiling salted water, then rinse under cold running water and drain well. Cook the peas for 5 minutes in boiling water.

Make an omelette with the eggs and slice it thinly. Cut the sausages into rounds. Wash and dry the spring onions and chop finely.

Heat the oil in a wok, add the rice and let it warm up for 2 minutes. Add the sliced sausage, egg strips, broccoli, peas and spring onions. Pour over the soy sauce, season, stir and serve.
