Special Diet

Ingredients
  • 8 teaspoons seasoned rice vinegar
  • 2 tablespoons caster sugar
  • 2 teaspoons Thai fish sauce
  • 2 tablespoons gluten-free soy sauce
  • 200 g (7 oz) dried rice ribbon noodles
  • 2 tablespoons vegetable or groundnut oil
  • 1 red chilli, deseeded and finely shredded
  • 1 large red pepper, cored, deseeded and finely shredded
  • 100 g (3½ oz) mangetout, thinly sliced lengthways
Directions

Mix together the vinegar, sugar, fish sauce and soy sauce in a bowl.

Soak the noodles in boiling water according to the pack instructions.

Heat the oil in a frying pan while the noodles are soaking, add the chilli, red pepper and mangetout and fry for 4–5 minutes until softened.

Drain the noodles and add to the pan with the vinegar mixture. Toss together and serve immediately.
