Chilli Prawn Noodles

  • 5 tablespoons tomato ketchup
  • 2 tablespoons light soy sauce
  • 2 teaspoons sugar
  • 2 teaspoons cornflour
  • 150 ml (1/4 pint) water
  • 2 tablespoons vegetable oil
  • 1 red pepper, deseeded and sliced
  • 2 garlic cloves, crushed
  • 2 teaspoons finely grated fresh root ginger
  • 1–2 red chillies, finely chopped
  • 250 g (8 oz) cooked peeled prawns
  • 300 g (10 oz) ready-cooked egg noodles
  • 1 lime
  • 2 spring onions, sliced
  • Stir together the ketchup, soy sauce, sugar, cornflour and measurement water until smooth, then set aside. Heat a large wok or frying pan. Add the oil and swirl around the pan, then add the red pepper and cook for 2 minutes.
  • Stir in the garlic, ginger and chilli and stir-fry for 1 minute, then add the prawns and the ketchup mixture and cook for 3 minutes until thickened.
  • Add the noodles to the pan and cook until heated through and coated with the sauce. Squeeze over the lime juice, scatter with the spring onions and serve immediately.
