  • 1 tablespoon olive oil
  • 1 garlic clove, crushed
  • 1 large white onion, chopped
  • 500 g (1 lb) curly kale, stalks removed and leaves chopped
  • 2 teaspoons lime juice
  • 1 red chilli, deseeded and chopped
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Heat the oil in a wok over a moderate heat. Add the garlic and onion and sauté for about 10 minutes or until the onion is translucent. Add the curly kale and stir-fry for another 5 minutes.

Stir in the lime juice and chilli, season with salt and pepper to taste and serve immediately.
