Meals and Courses

  • 3 ripe avocados, peeled, stoned and diced
  • 1 small red onion, roughly chopped
  • 3–4 drops Tabasco sauce
  • 3 tablespoons lime juice
  • 600 ml (1 pint) buttermilk
  • 4 tablespoons chopped fresh coriander
  • 12 ice cubes
  • soft flour tortillas, warmed and cut into strips, to serve

Place the avocado in a food processor, reserving a handful for garnish, with all the remaining ingredients except the ice cubes and blend until smooth.

Divide between 4 glass bowls and top each portion with 3 ice cubes and some of the reserved avocado. Serve immediately with warmed tortilla strips
