Chicory, Mackerel & Orange Salad

  • 2 heads of chicory
  • 2 mackerel fillets, flaked
  • 2 oranges, segmented
  • handful of watercress
  • juice of 1 orange
  • 1 tablespoon olive oil
  • 1 teaspoon wholegrain mustard
  • 1 teaspoon clear honey

Separate the chicory into individual leaves and mix them in a large bowl with the mackerel, orange segments and watercress.

Make the dressing. Whisk together the orange juice, oil, mustard and honey.

Drizzle the dressing over the salad and serve with crusty bread.
