Chickpea and Sprouted Seed Patties

  • 1/2 red onion, diced
  • 400 g (13 oz) can chickpeas, rinsed and drained
  • 1/4 teaspoon cumin seeds
  • 20 g (3/4 oz) sun-dried tomatoes
  • 2 tablespoons sprouted seeds, such as mung or lentil
  • 2 tablespoons olive oil
  • salt and pepper
  • mango chutney

  • Place the onion and chickpeas in a food processor or blender and blitz until the chickpeas are broken down. Add all the remaining ingredients except the olive oil, season with salt and pepper and blitz again until the mixture comes together.
  • Using wet hands, form the mixture into small patties. Cover and chill for 5 minutes.
  • Heat the oil in a large frying pan, add the patties and cook for 4–5 minutes on each side until golden.
  • Serve with a little mango chutney and a crisp green salad.
