Ingredients
  • 1 tablespoon sunflower oil
  • 500 g (1 lb) minced chicken
  • 1 onion, roughly chopped
  • 2 garlic cloves, finely chopped
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried chilli seeds
  • 1 teaspoon cumin seeds, roughly crushed
  • 400 g (13 oz) can chopped tomatoes
  • 400 g (13 oz) can red kidney beans
  • 150 ml (¼ pint) chicken stock (see page 10)
  • 1 tablespoon dark brown sugar
  • 50 g (2 oz) dark chocolate, diced
  • salt and pepper
Directions

Heat the oil in a saucepan, add the chicken and onion and fry, breaking up the mince with a wooden spoon until browned. Mix in the garlic, paprika, chilli and cumin seeds and cook for 1 minute.

Stir in the tomatoes, beans, stock and sugar, then mix in the chocolate and seasoning. Cover and simmer gently for 45 minutes, stirring occasionally. Spoon the chilli into bowls to serve
