Chicken Minestrone

Ingredients
  • 400 g (13 oz) can chopped tomatoes
  • 600 ml (1 pint) chicken stock
  • 125 g (4 oz) cooked chicken, chopped
  • 1 courgette, chopped
  • 125 g (4 oz) mixed frozen vegetables
  • 75 g (3 oz) mini-pasta shapes
  • 1 tablespoon ready-made pesto
  • salt and pepper
Directions
  • Put the tomatoes, stock, chicken, courgette and frozen vegetables in a saucepan. Bring to the boil, stirring, then add the pasta shapes and simmer for 5 minutes until the pasta is just tender.
  • Season with salt and pepper and stir in the pesto just before serving.
