Cherry Clafouti

  • 425 g (14 oz) can pitted black cherries, drained and dried on kitchen paper
  • 125 g (4 oz) plain flour
  • 50 g (2 oz) caster sugar
  • 3 eggs
  • 400 ml (14 fl oz) milk
  • icing sugar, for dusting
  • Grease a baking dish then arrange the cherries in a single layer in the base.
  • Beat together the flour, sugar, eggs and milk to make a smooth batter.
  • Pour the batter over the cherries and bake in a preheated oven, 180°C (350°F), Gas Mark 4, for 25 minutes until golden and just set. Serve warm with a dusting of icing sugar.
