Special Diet

Ingredients
  • 175 g (6 oz) Gruyère cheese
  • 3 spring onions, finely sliced
  • 1 teaspoon thyme leaves
  • 1 tablespoon chopped parsley
  • 100 g (3½ oz) rice flour
  • ½ teaspoon gluten-free baking powder
  • 150 g (5 oz) fresh gluten-free breadcrumbs
  • 1 teaspoon gluten-free English mustard
  • 3 eggs, beaten
  • 50 g (2 oz) butter, melted
  • 4 tablespoons milk
Directions

Line a muffin tray with 8 muffin cases.

Mix together all the ingredients in a large bowl until just combined and spoon the mixture into the muffin cases.

Place in a preheated oven, 190°C (170°F), Gas Mark 5, for 20 minutes or until golden and just firm to the touch. Remove from the oven and serve warm.
