Cheese and Onion Rarebit

  • 6 tablespoons caramelized onion or onion chutney
  • 4 large slices of sourdough bread, lightly toasted
  • 150 g (5 oz) shop-bought four-cheese sauce
  • 150 g (5 oz) mature Cheddar cheese, grated
  • 2 tablespoons wholegrain mustard
  • 2 egg yolks
  • salt and pepper
  • Worcestershire sauce (optional)
  • green salad
  • Spread the chutney over the toasted bread.
  • Put all the remaining ingredients into a bowl and beat together. Season to taste and spread over the toasts.
  • Place under a preheated medium-hot grill for 4–6 minutes, or until the topping is melting and golden. Serve with Worcestershire sauce, if desired, and a green salad.
