Cheese and Chive Crisps

  • 75 g (3 oz) Parmesan cheese, finely grated
  • 2 tablespoons finely chopped chives or 2 teaspoons dried chives
  • freshly ground black pepper
  • Line a large baking sheet with nonstick baking paper. Mix together the cheese, chives and a generous pinch of black pepper in a bowl.
  • Place a 9 cm (3 3/4 inch) plain cutter on the prepared baking sheet and evenly sprinkle 1 rounded tablespoon of the mixture inside. Remove the cutter and repeat with the remaining mixture to make 12–15 crisps.
  • Bake in a preheated oven, 200°C (400°F), Gas Mark 6, for 5–7 minutes until golden. Carefully transfer to a wire rack to cool and crisp.
