Cheat’s Pancetta and Broccoli Pizza

  • 12 slices pancetta
  • 4 gluten-free pitta breads
  • 200 g (7 oz) Tenderstem broccoli, trimmed and cut into bite-sized pieces
  • 200 g (7 oz) grated mozzarella cheese
  • Place the pancetta under a hot grill and cook for 4–5 minutes, until crisp.
  • Meanwhile, toast the pitta breads for 1–2 minutes on each side. Cook the broccoli in a pan of boiling water for 2 minutes, then drain.
  • Place 2 slices of the pancetta on each pitta bread and divide the broccoli between them. Sprinkle with the mozzarella and place under the hot grill for 2–3 minutes, until golden and bubbling.
