Smoothie, Cocktail and Juice

  • 2.5 cm (1 inch) piece fresh root ginger
  • 75 g (3 oz) celery
  • 300 g (10 oz) carrot
  • 50 g (2 oz) fennel, plus extra to serve (optional)
  • 1 tablespoon spirulina (optional)
  • ice cubes (optional)
  • fennel fronds, to decorate (optional)

Peel and roughly chop the ginger. Trim the celery and cut it into 5 cm (2 inch) lengths. Juice the carrot, fennel and spirulina, if using, with the ginger and celery.

Pour the juice into a glass over ice, if using, decorate with strips of fennel and fennel fronds, if liked, and serve immediately.
