Heat a nonstick frying pan over very low heat.
Add the almonds or pistachios and sugar and allow the sugar to melt, stirring from time to time with a wooden spatula until the sugar turns to caramel.
Oil a baking tray with the groundnut oil, then use a spoon to remove a few nuts and form into a small pile on the tray. Repeat with all the nuts.
Once the nuts are cold, transfer from the tray to a serving plate.
