Caramelized Berry Rice Pudding

  • 125 g (4 oz) frozen mixed summer berries
  • 1 tablespoon caster sugar
  • 425 g (14 oz) can ready-to-eat rice pudding
  • 4 tablespoons natural yogurt
  • 1 tablespoon soft light brown sugar
  • Place the fruit in a saucepan with the caster sugar and heat, stirring, for 3–4 minutes until the fruit has softened and defrosted. Tip the fruit and juice into a flameproof dish.
  • Mix together the rice pudding and yogurt in a bowl, then spoon over the fruit. Sprinkle over the brown sugar and place under a preheated hot grill for about 2 minutes until the sugar starts to melt and caramelize. Cool slightly before serving.
