Caramel Dipping Sauce with Fresh Fruit

  • 75 g (3 oz) unsalted butter
  • 175 g (6 oz) soft light brown sugar
  • 2 tablespoons golden syrup
  • 1 teaspoon vanilla extract
  • 150 ml (1/4 pint) double cream
  • apple wedges and bananas chunks, for dipping
  • Place the butter, sugar, golden syrup and vanilla extract in a heavy-based nonstick saucepan and stir over a low heat until the butter has melted and the sugar has dissolved. Add the cream, stirring continuously. Bring back to the boil and simmer for 5 minutes until thickened.
  • Pour into a bowl and leave to stand for a few minutes before serving with the apples and bananas, for dipping.
