Caramel & Honeycomb Mousse

prep 15 mins, plus cooling and chilling
  • 150 g (5 oz) good-quality milk chocolate, broken into pieces
  • 200 g (7 oz) canned caramel
  • 250 ml (8 fl oz) double cream
  • 40 g (1½ oz) bar milk chocolate with golden honeycomb, roughly chopped, plus extra to decorate

Melt the chocolate in a heatproof bowl set over a saucepan of gently simmering water, stirring occasionally, making sure that the water doesn't touch the base of the bowl. Leave to cool slightly.

Place the caramel in a bowl with the cream and whisk with a hand-held electric whisk until the mixture starts to thicken and leaves a trail.

Stir a little of the caramel mixture into the melted chocolate, then fold the chocolate mixture into the caramel mixture until well combined. Stir in the chocolate honeycomb.

Spoon into 6 small glasses and chill for 15–30 minutes (no longer, otherwise the honeycomb will start to dissolve). Decorate with a little extra chocolate honeycomb before serving.
