Melt the chocolate in a heatproof bowl set over a saucepan of gently simmering water, stirring occasionally, making sure that the water doesn't touch the base of the bowl. Leave to cool slightly.
Place the caramel in a bowl with the cream and whisk with a hand-held electric whisk until the mixture starts to thicken and leaves a trail.
Stir a little of the caramel mixture into the melted chocolate, then fold the chocolate mixture into the caramel mixture until well combined. Stir in the chocolate honeycomb.
Spoon into 6 small glasses and chill for 15–30 minutes (no longer, otherwise the honeycomb will start to dissolve). Decorate with a little extra chocolate honeycomb before serving.
