Make the citrus and garlic mayonnaise. Put the garlic, egg yolk and lime or lemon juice and rind in a food processor or blender, process and then gradually pour in the oil, while still blending, to give a thick mayonnaise. Stir through the herbs.
Mix together the flour and chilli flakes and coat the calamari. Heat a little oil in a frying pan. Add the calamari and fry in batches until golden. Toss with the lemon juice. Serve the calamari with spoonfuls of the mayonnaise and a green salad, if liked.
