Cajun-Spiced Hot Dogs

  • 2 tablespoons vegetable oil
  • 1 red onion, halved and sliced
  • 2 red peppers, or 1 red and 1 yellow, cored, deseeded and sliced
  • 8 chicken or pork frankfurter sausages
  • 1 tablespoon Cajun seasoning mix
  • 8 long bread rolls, warmed
  • ready-made salsa (optional)
  • Heat the oil in a large nonstick frying pan, and cook the onions and peppers over a high heat for 6–7 minutes, until slightly charred.
  • Reduce the heat slightly and add the frankfurters and Cajun spices. Cook for 2–3 minutes, until hot. Serve the sausages and cooked vegetables in warmed rolls with salsa, if desired.
