Caesar Salad with Chicken, Bacon and Parmesan

  • 1/2 ciabatta loaf, cubed
  • 2 tablespoons olive oil
  • 1 cos (romaine) lettuce, leaves separated
  • 200 g (7 oz) cooked chicken, chopped
  • 75 g (3 oz) cooked crispy bacon rashers, broken into pieces
  • 6 tablespoons ready-made Caesar salad dressing
  • 25 g (1 oz) Parmesan cheese shavings
  • Place the ciabatta cubes on a foil-lined grill pan and drizzle over the olive oil. Toast under a preheated medium grill for about 5 minutes, turning occasionally, until golden and crisp.
  • Meanwhile, roughly tear the lettuce leaves and place in a salad bowl with the chicken and most of the bacon pieces.
  • Add the toasted bread cubes and salad dressing and toss well to mix. Sprinkle over the reserved bacon pieces and the Parmesan shavings. Serve straight away.
