Cabbage & Anchovy Pasta

  • 175 g (6 oz) pasta shapes
  • 1 tablespoon olive oil
  • ¼ Savoy cabbage, finely shredded
  • 1 garlic clove, sliced
  • 4 anchovies, finely chopped
  • 2 tablespoons pine nuts
  • 2 tablespoons grated Parmesan cheese

Cook the pasta in boiling water according to the instructions on the packet. Drain and keep warm.

Meanwhile, heat the oil in a frying pan. Add the cabbage and garlic and cook for 5–6 minutes until the cabbage is tender. Add the anchovies, pine nuts and Parmesan and stir to combine.

Toss the cabbage mixture through the pasta and serve immediately.
