Butter Bean and Mushroom Tagine

Ingredients
  • 1 tablespoon olive oil
  • 1 red onion, sliced
  • 2 carrots, peeled and sliced
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds
  • 1/4 teaspoon turmeric
  • 800 ml (1 pint 8 fl oz) hot vegetable stock
  • 1 tablespoon tomato purée
  • 300 g (10 oz) mushrooms, chopped
  • 400 g (13 oz) can butter beans, rinsed and drained
  • 2 tablespoons chopped dill
  • salt and pepper
  • cooked rice, to serve
Directions
  • Heat the oil in a saucepan, add the onion and sauté for 5–6 minutes until softened. Add the carrot and spices and cook for a further 2 minutes.
  • Pour in the stock and stir in the tomato purée, then add the mushrooms and butter beans. Season with salt and pepper and add the dill, then simmer for 12–15 minutes.
  • Serve with cooked rice.
