Broccoli and Anchovy Linguine

  • 450g (14½ oz) gluten-free linguine
  • 300g (10 oz) broccoli, broken into florets
  • 6 tablespoons extra virgin olive oil
  • 1 red chilli, deseeded and finely chopped
  • 16 anchovies, chopped
  • Cook the pasta in a large saucepan of boiling water for 9 minutes, or according to the pack instructions, adding the broccoli florets after 5 minutes.
  • Drain the pasta and broccoli and keep warm.
  • Meanwhile, heat the oil in a frying pan over a medium heat, add the chilli and anchovies and stir-fry for 2 minutes.
  • Add the pasta and broccoli to the pan, stirring well to coat with the spicy oil. Serve immediately.
