  • 300 ml (½ pint) apple juice
  • 1 large egg, beaten
  • 25 g (1 oz) unsalted butter, softened
  • 1½ teaspoons salt
  • 2 tablespoons milk powder
  • 1 teaspoon ground mixed spice
  • 125 g (4 oz) fruit muesli, plus extra for sprinkling
  • 425 g (13 oz) strong white bread flour
  • 50 g (2 oz) light muscovado sugar
  • 1¼ teaspoons fast-action dried yeast
  • 50 g (2 oz) raisins
  • milk, to brush

Lift the bread pan out of the machine and fit the blade. Put the ingredients, except the raisins, in the pan following the order specified in the manual.

Fit the pan into the machine and close the lid. Set to a 1 kg (2 lb) loaf size on the basic white programme. Select your preferred crust setting. Add the raisins when the machine beeps.

Just before baking begins brush the top of the dough lightly with milk and sprinkle with a little muesli. Close the lid gently.

At the end of the programme lift the pan out of the machine, loosen the bread with a spatula if necessary and shake it out on to a wire rack to cool.
