  • 750 g (1½ lb) boneless pork shoulder, minced
  • 2 garlic cloves, crushed
  • 1 tablespoon chopped thyme
  • 2 tablespoons cornflour
  • 1 egg, lightly beaten
  • spray oil
  • 4 large flat mushrooms, trimmed
  • 4 back bacon rashers, rind removed
  • 4 large sesame seed rolls, halved
  • 2 ripe tomatoes, sliced
  • American-style mustard or mayonnaise (optional)
  • salt and black pepper
  • tomato sauce, to serve

Combine the pork, garlic, thyme, cornflour, egg and some salt and pepper in a bowl and, using your hands, work together until well blended. Divide the mixture into quarters and shape into 4 even-sized patties. Chill for 30 minutes.

Spray the patties with a little oil and cook on a hot barbecue for 5—6 minutes on each side. Set aside to rest until required. Barbecue the mushrooms for 2—3 minutes on each side and the bacon for 2 minutes on each side.

Place the patties on the sesame rolls and top with the mushrooms, bacon and tomatoes and some mustard, if liked. Serve with tomato sauce.
