Breakfast Banana Split

  • 50 g (2 oz) unsalted butter
  • 2 tablespoons clear honey
  • 4 bananas, cut in half lengthways
  • 2 dessert apples, grated
  • 300 g (10 oz) Greek yogurt
  • finely grated rind of 1 orange
  • 50 g (2 oz) walnuts, toasted
  • 2 tablespoons flaked almonds, toasted
  • 2–3 tablespoons maple syrup
  • Melt the butter in a frying pan with the honey until it sizzles.
  • Place the bananas in the frying pan, cut side down, and cook for 3–4 minutes, until golden.
  • Meanwhile, mix together the grated apple, yogurt and orange rind.
  • Spoon the bananas onto 4 warmed plates and top with a large dollop of the yogurt mixture.
  • Sprinkle over the nuts, then drizzle with the maple syrup and any juices from the pan to serve.
