Brandied Cranberry Sauce

  • 125 g (4 oz) fresh or frozen cranberries, defrosted if frozen
  • 150 ml (¼ pint) water
  • 2 tablespoons light brown sugar
  • pared rind of 1 orange
  • 2 tablespoons brandy

Mix the cranberries, water, light brown sugar, orange rind and brandy together in a saucepan.

Cover the pan and cook over a low heat, stirring, for 5– 10 minutes, until the cranberries burst.
