Blueberry and Orange Eton Mess

  • 250 ml (8 fl oz) low-fat fresh chilled custard
  • 200 g (7 oz) fat-free blueberry yogurt
  • 1 teaspoon finely grated orange rind
  • 1 teaspoon vanilla bean paste or extract
  • 150 g (5 oz) blueberries
  • 4 ready-made meringues nests, about 50 g (2 oz) total weight
  • Put the custard, yogurt, orange rind and vanilla bean paste or extract in a bowl and stir until well combined.
  • Put two-thirds of the blueberries in 4 tall glasses. Spoon over the blueberry yogurt mixture, then top each glass with a lightly crushed meringue. Sprinkle over the remaining blueberries and serve immediately.
