Blueberry and Date Mousse

  • 75 g (3 oz) dates
  • 75 g (3 oz) pitted prunes
  • grated rind of 1 orange
  • 2 tablespoons crème fraîche
  • 3–4 tablespoons natural yogurt
  • 100 g (3½ oz) blueberries
  • grated plain dark chocolate, to serve
  • Place the dates and prunes in a food processor with the orange rind and process until broken down.
  • Add the crème fraîche, the yogurt and the blueberries and process again until you have a mousse-like texture.
  • Spoon into 4 glasses and sprinkle with a little grated chocolate to serve.
