Ingredients
  • 2 lean bacon rashers
  • 2 slices of wholemeal bread or multi-grain bread
  • 2 tablespoons mayonnaise
  • 2 tomatoes, halved
  • about 4 baby lettuce leaves
  • salt and pepper
Directions

Heat a small, nonstick frying pan and cook the bacon, turning once, until it is golden brown and crisp. Remove and drain on kitchen paper.

Toast the bread on both sides. Spread one side of each piece of toast with mayonnaise and arrange the bacon, tomatoes and lettuce on top of one of the pieces. Season with salt and pepper and top with the other piece of toast. Cut into quarters. Serve hot or cold.
