BLT Club Sandwiches

  • 4 back bacon rashers
  • 6 slices of wholemeal bread
  • 1 carrot, peeled and grated
  • 125 g (4 oz) soft cheese
  • 2 tomatoes, sliced
  • 6 Little Gem lettuce leaves
  • cherry tomatoes and cucumber sticks, to serve
  • Cook the bacon under a preheated hot grill for about 5 minutes, turning once, until crisp.
  • Toast the bread slices on both sides.
  • Mix together the carrot and soft cheese and spread over 2 slices of the toast. Arrange the tomato slices on top.
  • Cover with another slice of toast, and top with the lettuce and bacon. Place the remaining slices of toast on top.
  • Press the sandwich stacks down firmly and cut each into 4 triangles. Stick a cocktail stick flag through each sandwich to hold it all together. Serve with halved cherry tomatoes and cucumber sticks.
