Blackened Tuna with Mango Salsa

prep 10 mins, plus marinating cook 2 mins
  • 4 tuna steaks, about 250 g (8 oz) each
  • 1 tablespoon extra virgin olive oil
  • 2 tablespoons freshly crushed black pepper
  • 1 teaspoon salt
  • lime slices, to garnish
  • 1 large mango, about 500 g (1 lb), diced
  • ½ red onion, finely chopped
  • 1 large red chilli, deseeded and finely chopped
  • 1 tablespoon lime juice
  • 2 tablespoons chopped coriander
  • salt and black pepper

Make the mango salsa by combining all the ingredients in a bowl and seasoning to taste. Set aside for the flavours to develop.

Brush the tuna steaks with a little oil and season with the peppercorns and salt. Cook the tuna on a hot barbecue for about 1 minute on each side (or a little less if wished). Rest briefly, then serve with the salsa and the lime slices to garnish.
