Blackberry Fools with Almond Tuiles

  • 100 g (3 1/2 oz) frozen blackberries
  • 50 g (2 oz) icing sugar
  • 200 ml (7 fl oz) double cream
  • 300 g (10 oz) Greek yogurt
  • fresh blackberries (optional)
  • 12 shop-bought almond tuiles
  • Place the frozen blackberries and icing sugar in a blender or food processor and blend until smooth.
  • Whip the cream in a bowl with a hand-held electric whisk until it forms soft peaks. Fold in the yogurt and blackberry purée and spoon into 6 serving glasses.
  • Scatter with fresh blackberries, if using, and serve immediately with the almond tuiles.
