Blackberry Crumble

  • 750 g (1 1/2 lb) blackberries
  • 2 oranges, segmented
  • zest and juice of 1 orange
  • 200 g (7 oz) butter
  • 200 g (7 oz) plain flour
  • 100 g (3 1/2 oz) soft brown sugar
  • cream, ice cream or custard, to serve (optional)
  • Mix the blackberries, orange segments and the orange zest and juice together in a bowl.
  • In a separate bowl rub together the butter and flour with your fingertips until it resembles breadcrumbs and then stir in the sugar.
  • Tip the blackberry mixture into a large pie dish and scatter over the crumble mixture to cover.
  • Bake in a preheated oven, 220°C (425°F), Gas Mark 7, for 20–25 minutes until golden. Remove from the oven and serve warm with cream, ice cream or custard, if liked.
