Blackberry Charlotte

  • 500 g (1 lb) blackberries
  • 150 g (5 oz) caster sugar
  • 1 teaspoon vanilla extract
  • 8 small, thin slices of white bread
  • 25 g (1 oz) unsalted butter, softened
  • custard, to serve (optional)
  • Place the blackberries in an ovenproof dish, then gently stir in the sugar and vanilla extract.
  • Cut the crusts from the bread, spread both sides with the butter and cut in half to form triangles. Arrange over the blackberries, overlapping slightly in 2 rows.
  • Place in a preheated oven, 190ºC (375ºF), Gas Mark 5, for 20–25 minutes or until the bread is golden and crisp and the fruit bubbling. Serve with custard, if using.
