Blackberry and Apple Puffs

  • 2 tablespoons vegetable oil
  • 75 g (3 oz) plain flour
  • 1/2 tsp ground cinnamon
  • pinch of salt
  • 50 g (2 oz) caster sugar, plus 1 tablespoon
  • 200 ml (7 fl oz) milk
  • 2 large eggs
  • 125 g (4 oz) blackberries
  • 1 small dessert apple, cored and cut into thin slices
  • icing sugar, for dusting
  • Liberally brush a 12-hole bun tray with the oil. Place in a preheated oven, 180ºC (350ºF), Gas Mark 4 to heat.
  • Meanwhile, sift the flour, cinnamon and salt into a large bowl. Stir in the 50 g (2 oz) sugar and make a well in the centre. Whisk together the milk and eggs in a jug, then gradually whisk into the flour to form a smooth batter.
  • Remove the hot bun tin from the oven and pour in the batter. Add a couple of blackberries in the centres, then top with apple slices and sprinkle with the 1 tablespoon sugar.
  • Return to the oven and cook for 20 minutes or until risen, golden and cooked through. Serve dusted with icing sugar.
