1 small dessert apple, cored and cut into thin slices

Liberally brush a 12-hole bun tray with the oil. Place in a preheated oven, 180ºC (350ºF), Gas Mark 4 to heat.
Meanwhile, sift the flour, cinnamon and salt into a large bowl. Stir in the 50 g (2 oz) sugar and make a well in the centre. Whisk together the milk and eggs in a jug, then gradually whisk into the flour to form a smooth batter.
Remove the hot bun tin from the oven and pour in the batter. Add a couple of blackberries in the centres, then top with apple slices and sprinkle with the 1 tablespoon sugar.
Return to the oven and cook for 20 minutes or until risen, golden and cooked through. Serve dusted with icing sugar.
