  • 110 g (3 3/4 oz) caster sugar
  • 110 g (3 3/4 oz) plain flour, plus extra for dusting
  • 1 teaspoon baking powder
  • grated rind of 1 lemon
  • 50 g (2 oz) blanched almonds
  • 15 g (1/2 oz) dried cranberries
  • 1 egg, beaten
  • Place all of the ingredients in a bowl and, using your hands, bring them together to make a stiff dough.
  • Turn out on to a floured work surface and roll into a sausage shape about 28 cm (11 inches) long. Place on a baking sheet and bake in a preheated oven, 220°C (425°F), Gas Mark 7, for 15 minutes.
  • Remove from the oven, leave to cool for 2–3 minutes and then gently slice into biscotti.
  • Lay the biscotti flat on the baking sheet, return to the oven and cook for a further 2–3 minutes to crisp.
  • Leave to cool on a wire rack.
