Best-Ever Crab Sandwich

  • 25 g (1 oz) brown crabmeat
  • 2 tablespoons mayonnaise
  • pinch of cayenne
  • 1 teaspoon tomato ketchup
  • lemon juice, to taste
  • 4 slices of crusty brown bread
  • 75 g (3 oz) white crabmeat
  • salt and pepper
  • 25 g (1 oz) watercress
  • lightly salted crisps, to serve (optional)
  • Mix together the brown crabmeat, mayonnaise, cayenne and ketchup. Add lemon juice to taste and season.
  • Spread the crab mixture over 2 slices of the bread. Scatter over the white crabmeat and watercress and top with the remaining slices of bread. Cut diagonally in half and serve with some lightly salted crisps, if you like.
