Berry-Full Baskets

  • 250 g (8 oz) mascarpone cheese
  • 150 ml (1/4 pint) double cream
  • 2 tablespoons caster sugar
  • 1 teaspoon vanilla extract (optional)
  • 6 brandy snap baskets
  • 500 g (1 lb) mixed summer berries (such as hulled strawberries, raspberries and blueberries)
  • Beat together the mascarpone cheese, cream, caster sugar and vanilla, if using, until smooth and thick.
  • Spoon into the brandy baskets and top with the mixed berries so that they are tumbling out. Serve immediately.
