Berry Eton Mess

  • 50 g (2 oz) meringue nests, broken into chunks
  • 350 g (11 1/2 oz) mixed berries, such as strawberries, raspberries, blueberries and blackberries, defrosted if frozen
  • 300 g (10 oz) natural bio yogurt
  • 2 knobs of stem ginger, diced
  • Place the meringues in a large bowl and add the berries and yogurt. Mix very gently so the meringue pieces do not break up too much.
  • Divide between 4 glasses or bowls and sprinkle with the stem ginger.
