Berry and Coconut Porridge

  • 200 g (7 oz) rolled oats
  • 600 ml (1 pint) milk
  • 4 tablespoons natural yogurt
  • 200 g (7 oz) fresh berries – raspberries, blueberries and hulled strawberries
  • 3 tablespoons desiccated coconut, plus extra to scatter
  • 4 tablespoons clear honey
  • Place the oats in a saucepan with the milk and 600 ml (1 pint) water. Bring to the boil, then simmer for 8 minutes, until thick and creamy, stirring often.
  • Pour into 4 warmed bowls and stir in a swirl of the yogurt.
  • Top with the berries and a drizzle of honey, then scatter with desiccated coconut.
